500g fine sugar

To make the Premix (makes 850ml, to serve 10)

Method

Making the Cordial: Combine the listed items into a pan, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the heat and let it to reach room temperature entirely. Pour to a sterilised bottle, cap it keeping it chilled, where it will keep for up to four weeks.

For the Premix: Mix the specified liquid ingredients in a large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, so it's perfectly clear.

When ready to serve: Measure 85ml of your cocktail base into a stirring glass containing ice, gently stirring carefully for a minute to chill. Strain into a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch with a light spray of mandarin oil above the glass.
